help with rc servos setup?

hey im making a weedeater powered boat out of fiberglass it’ll be double hull design but i dont have much experience with setting up rc servos to control the parts of the boat. basically i want something to control the speed, it has to be a servo with enough power to pull a light wire connected to the engines throttle and a servo to control the rudder(s).
what is the best way to get about doint this, should i get a old rc car and use its rc system or should i buy a new one, and what would i look out for when buying one.

    The torque of your servo will depend on the size of your boat to steer the rudder.
    If your boat uses a nitro or petrol engine then the same applies with the resistance the throttle cable and how much rotation the servo has to make to increase the throttle of the engine.
